Hi Stephen,
I would go directly from 5.7 to 6.1 and skip the intermediate steps.
I hope you still have the 5.7 development environment available, because you need to dump the database to text file by executing the first pass in reload.sh, dumpdb. The sequence is very similar to this thread

Make sure you redirect the project to 6.1 in $pwra_db/pwr_projectlist.dat in the 6.1 nvironment. Also enter the directoryvolume and save before starting the reload of the database.
If you have a storage server configured with a SevNodeConfig object, this has to be configured as a process station instead. Amd if you have any Profinet devices you should execute the conversion passes in upgrade.sh in 6.1.
If there is any c code that handles string or time signals you will get compilation errrors and have to make some adjustments.
